Mama Mia's Recipes

Olive Oil Bread Dipper

Put 1 to 2 Tablespoons Mama Mia’s in a shallow dish and a 1/4 cup extra virgin olive oil. Let rest 10 minutes and enjoy dipping bread into the yummy spice and olive oil blend. Add more olive oil and Mama Mia's as you, and your guests enjoy the spice blend.


Dry Rub

Rub 1 to 2 Tablespoons of Mama Mia’s on chicken, turkey, pork or beef that has been coated with olive oil. Put in plastic bag and marinate at least four hours, up to 24, massaging the meat periodically.  Grill, sauté or broil.



Add 1 to 2 Tablespoons Mama Mia’s to 1 cup sour cream. Refrigerate 30 minutes. Use as a zesty dip for veggies or crackers.

Cheese Ball

Blend 1 to Tablespoons Mama Mia’s into a tub of whipped cream cheese, or whip it into an eight-ounce package and add a tad bit of olive oil to smooth the cheese and make it spreadable. Roll into a log and serve with crackers.



4 ounces of unsalted butter with 2 teaspoons of Mama Mia’s is wonderful to spread on bread and toast as you would garlic bread. Use the butter with olive oil to sauté zucchini, onions and mushrooms.  Add fresh cooked pasta, and you have dinner!


A simple and tasty way to make a special bruschetta from a can of stewed tomatoes, many already have in their pantry. Be sure to make a double batch to use not only as a bread topping put to have on hand for grilled steak or chicken. Or stir into sour cream for its own special dip. You don't have to go to Italy to experience this tasty spread. This recipe will last 7 days in your refrigerator, if it lasts that long. :) Enjoy!!

2 cans stewed tomatoes, drained. (Use the drained juice in your Bloody Mary's, soup, stews, chili or spag sauce. 

Place the drained stewed tomatoes onto a baking sheet that has been coated with olive oil, or cooking spray.

Bake in a low oven (300 to 325 degrees for 30 to 45 minutes, stirring every 15 minutes) until the tomatoes look somewhat like a sun-dried tomato, but not as dried.

Let cool, about 15 minutes.

Stir 1/4 cup extra virgin olive oil and 2 to 3 teaspoons Mama Mia's into the tomatoes.

Refrigerate overnight.

The next day add 2 Tablespoons balsamic vinegar, stir and refrigerate until ready to serve.

Be sure to taste for seasoning before serving, you may want to add a bit more Mama Mia's, olive oil, or balsamic vinegar to satisfy your taste.

Our New, Organic Cracker Spice Blends are making a hit at holiday parties this year! Our seasoning package is enough to make one pound of saltine crackers.

For 1 # saltine crackers put the whole package of Bernice's Cracker Spice into a bowl. Add 1¼ cup canola oil, stir until well blended. Divide your saltines into 2, one-gallon zip bags or large containers. Pour oil/spice blend over crackers. Gently toss every 15 minutes until the spice blend is absorbed.

For those of you who have smaller households you can divide the package by using 2 tablespoons cracker spice with 1/2 cup plus 1 tablespoon canola oil and 2 sleeves of crackers in 1, one-gallon bag.
